On most evenings, guests gather at the Calabash's fine dining restaurant, Rhodes, which has consistently been voted the best restaurant on the island for the last seven years. Hanging orchids and vines, white-clothed tables, and adjoining Piano Bar give the space an enchanting old-school charm. At this flagship restaurant, overseen by executive head chef Ramces Castillo, menus feature an inventive take on locally-sourced ingredients and there is a sense of occasion about every course. Within the al-fresco space, an exacting level of service and an excellent wine list adding to the fine-dining ambiance. With a passion for field-to-fork cuisine and for sourcing the freshest, most authentic produce, much of the kitchen’s ingredients come from local farmers or from Lilian Garbutt’s family-owned L’Esterre Estate, which practises regenerative techniques to increase biodiversity and produce the highest quality crops.
